Natural Processed Versus Washed Processed Coffee



For years at Cloudland Coffee we have offered just washed processed coffees. Recently, we have added a natural processed coffee from Ethiopia. Both types of methods have their own unique characteristics that can significantly impact the flavor profile of the final cup of coffee.

What is Natural Processing?

Natural processing, also known as dry processing, involves drying the coffee cherries in the sun before removing the outer layers to reveal the beans inside. This method allows the beans to absorb more of the sugars and flavors from the fruit, resulting in a sweeter and fruitier taste profile. Natural processed coffees are often described as having a more complex and intense flavor.

What is Washed Processing?

On the other hand, washed process, also known as wet process, involves removing the outer skin and pulp of the coffee cherry before the beans are dried. This method requires the use of water to separate the beans from the fruit, resulting in a cleaner and brighter cup of coffee. Washed process coffees are prized for their clarity, acidity, and floral or tea-like notes.

Key Differences

One of the main differences between natural process and washed process coffees lies in their flavor profiles. Natural process coffees tend to have a heavier body and more pronounced fruity notes, while washed process coffees are characterized by their clean, bright acidity. Additionally, natural process coffees often exhibit a more complex and intense flavor profile compared to washed process coffees.

Another key difference is the impact on the environment. Natural process coffees require less water during processing, making them a more sustainable option in regions where water scarcity is a concern. On the other hand, washed process coffees requires a lot of water.
